As anyone who has worked with chicken breasts before knows, they can be very versatile, but they can be very difficult to work with, especially if they are baked in the oven. Cook it wrong and you end up with a dry, rubbery, tough, tasteless disaster. But did you cook well?! We say “have the juiciest, most tender, flavorful, grilled chicken you’ll ever eat.”

Whenever you want to bake a chicken breast in the oven. Salted chicken is very easy, it makes the chicken juicy, and best of all, it can be done in 15 minutes. Also, if you put the chicken in warm water, it will also help to bring the chicken to room temperature, which will cook it evenly. Win-win!

Baked Chicken Breast

To brine the chicken, fill a large bowl with warm (not hot) water. Add more salt until it is mostly dissolved. Then add the chicken breast and put it in the brine for at least 15 minutes. If you do this ahead of time, you can cover the bowl of chicken with the brine and put it in the refrigerator for 6 hours. But you don’t want to marinate the chicken any longer than that.

When done, remove the chicken from the brine. Rinse with cold water to remove the salt, then dry with a paper towel. And voila – your chicken is officially salted.

But mostly I like it because cooking at high heat creates a hot “crust” on the outside of the breast, which also helps seal in the juices and keep the oven-roasted chicken well done on the inside. It’s the best of both worlds.

I recommend investing in a small thermometer that you can use to measure the temperature of cooked chicken to see if it’s done (the FDA says the safe temperature for cooked chicken is 165°F) rather than cutting it with a fork, which gives them a nice kick. the juices run away. Allow grilled chicken breasts to sit well before slicing – a tip that works for cooking any meat.
